Pour the wine over the blackberries in a large bowl and use a potato masher to crush.
Cover with a tea towel and leave for a couple of days giving it a good mash every time you walk past.
Sieve twice to remove any remaining blackberries
Pass through a sieve lined with a muslin to remove any fine particles.
Add the juice to a pan with the sugar and heat gently till the sugar dissolves, simmer gently for 5 minutes.
Allow to cool in the pan.
Once cool add in the gin and stir to combine
Decant into pretty bottles and seal.
Will keep for a year.
