Mincemeat granola bars


100g olive margarine
200g rolled oats
50g pumpkin seeds
50g sunflower seeds
100g chopped almonds
300g mincemeat
1 tsp cinnamon
110g honey
1 tsp vanilla extract
90g chocolate chips
zest of 2 oranges


Preheat oven to 160 degrees C. 
Grease an 8x8-inch baking tin.
Mix together all the ingredients in a large bowl.
Transfer into the tin and press down firmly. 
Bake for 35-40 minutes, or until golden brown.
Allow to cool completely in the tin before turning out on a cutting board. 
Cut granola bars into 32 mini bites.
Can be individually wrapped and frozen for ideal lunchbox treats!
